Ingredients
  

  • Wet
  • 1/2 cup butter melted & cooled
  • 3/4 cup coconut sugar
  • 1 egg + 1 egg yolk
  • 2 tbsp yogurt
  • 1 1/2 tsp vanilla
  • Dry
  • 1 1/8 cup all-purpose flour
  • 1/4 cup oat flour
  • 1 tbsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • Add-ins
  • 3/4 cup chocolate chips
  • 1/4 cup chopped chocolate Optional

Equipment

  • 1 mixer
  • 2 mixing bowls
  • 1 measuring cups & spoons
  • 1-2 cookie sheets
  • 1 oven

Method
 

  1. Mix Wet
  2. Whisk/mix butter + coconut sugar well (slightly glossy)
  3. Add eggs, yogurt, vanilla → mix until smooth
  4. Combine dry ingredients in a separate bowl
  5. Add Dry ingredients to wet ingredients
  6. Mix until just combined
  7. Fold in chocolate
  8. Chill Dough (CRITICAL)
  9. 👉 1–2 hours
  10. This gives:
  11. ✔ thicker cookies
  12. ✔ better flavor
  13. ✔ less spread
  14. Scoop Large Dough Balls
  15. 👉 Approx. 3 tbsp per cookie.
    Tip: Use a cookie scoop to portion the dough evenly.
  16. Don’t make them small—this is key.
  17. Bake
  18. 375°F
  19. Bake 9–11 minutes
  20. At minute 7–8:
  21. 👉 gently tap pan on rack
  22. (This creates ripples 👈 bakery trick)
  23. Finish (DON’T SKIP)
  24. Immediately after baking:
  25. press extra chocolate on top
  26. optional: light flaky salt
  27. Cool
  28. Let sit on pan 10–15 min

Notes

Remove from oven when edges are golden and centers are still soft.
Immediately after removing from oven, add extra chocolate on top and sprinkle flaky salt (optional).
