Nourishing & Anti-Inflammatory Chicken Noodle Soup From Scratch

There is something deeply comforting about homemade chicken soup slowly simmering on the stove.
The warmth.
The smell.
The ritual of chopping vegetables and tending to a nourishing meal.
Sometimes nourishment is about more than simply feeding ourselves physically.
Sometimes it’s about slowing down.
Grounding.
Creating warmth and comfort.
Supporting the body gently during stressful seasons, cold days, illness, burnout, or times when we simply need a little extra care.
This nourishing & anti-inflammatory chicken noodle soup has become one of my favorite grounding meals over the years. I’ve slowly adapted and combined different recipes to create a version that feels deeply nourishing, comforting, and supportive to both the body and nervous system.
Made with homemade bone broth, healing herbs, fresh vegetables, garlic, ginger, turmeric, and mineral-rich ingredients, this soup is filled with anti-inflammatory and nourishing components that support overall wellness while still tasting cozy and comforting.
It’s one of those meals that feels like care in a bowl.

One of my favorite parts of this recipe is slowly simmering the whole chicken to create a homemade broth.
Homemade broth contains naturally occurring minerals, collagen, amino acids, and gelatin released from the bones and connective tissues during cooking.
Many people find homemade broth deeply comforting and supportive during times of:
- stress
- illness
- burnout
- digestive upset
- seasonal transitions
- or emotional exhaustion
The slow process itself also invites us to slow down a little too.
Nourishing & Anti-Inflammatory Ingredients
This soup includes many ingredients traditionally known for their nourishing and anti-inflammatory properties.
Garlic
Garlic contains sulfur compounds and antioxidants that may help support immune function and overall wellness.
Ginger
Fresh ginger is traditionally used to support digestion, circulation, and inflammation balance while adding warmth and depth to the soup.
Turmeric
Turmeric contains curcumin, a compound known for its anti-inflammatory and antioxidant properties.
Rosemary, Thyme & Parsley
These herbs not only add flavor but also contain antioxidants and plant compounds that support overall wellness.
Carrots, Celery & Leeks
These vegetables provide fiber, vitamins, minerals, and grounding nourishment while creating the classic comforting flavor of homemade soup.
Bok Choy or Kale
Dark leafy greens provide minerals, antioxidants, and additional nourishment for the body.
Kombu Seaweed
Kombu is rich in trace minerals and can help add additional depth and mineral content to homemade broth.
Apple Cider Vinegar
Adding apple cider vinegar while simmering broth may help draw minerals from the bones into the broth.

Nourishing & Anti-Inflammatory Chicken Noodle Soup
Ingredients
Method
- Place rinsed whole organic chicken into a large stockpot with heart and liver if included. Cover with water by approximately 1 inch (about 5–6 quarts of water) and add apple cider vinegar.
- Bring to a boil over medium-high heat, then reduce heat to maintain a gentle boil for approximately 1 hour.
- Carefully remove chicken from pot and place on a large plate to cool for 5–10 minutes. Remove chicken meat from bones and refrigerate until ready to add back to soup.
- Add the following broth ingredients back into the pot:
- chicken carcass and bones
- carrot chunks
- celery chunks
- onion
- peppercorns
- juniper berries
- kombu seaweed
- Return broth to a gentle simmer and cook covered for an additional 3–5 hours, slightly tipping the lid so some steam can escape.
- Carefully strain broth through a fine mesh strainer or cheesecloth-lined colander into another large bowl or stockpot.
- Return strained broth to the stove and bring to a low boil.
- Add chopped carrots, celery, onion, garlic, leeks, turmeric, ginger, rosemary, thyme, poultry seasoning, garlic salt, and black pepper.
- Simmer vegetables for approximately 20 minutes or until tender.
- Add noodles after vegetables have cooked about 10 minutes and continue cooking according to package directions.
- Stir in bok choy or kale during the last few minutes of cooking until wilted.
- Remove from heat and stir in parsley.
- Taste and adjust salt as desired.
- Serve warm and enjoy.
