  • 1 egg + 1 egg yolk
  • 1/3 cup maple syrup
  • 1/3 cup coconut sugar
  • 1/4 banana mashed
  • Choose ONE:
  • 1/4 cup applesauce softer, more tender
  • OR
  • 1/4 cup cashew or almond butter slightly more structured, less cake-like
  • 1 1/2 tsp vanilla extract
  • Dry Ingredients
  • 1 cup gluten-free flour blend
  • 3/4 cup oat flour
  • 1/2 cup almond flour omit if nut-free—see notes
  • 1 1/2 tbsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp ground flax
  • 3/4 –1 cup dairy-free chocolate chips

Equipment

Method
 

  1. Mix Wet Ingredients

  3. Whisk in melted coconut oil.
  4. Mix Dry Ingredients
