Ingredients
  

  • 1 cup cottage cheese blended smooth
  • 4 whole eggs
  • cup applesauce, yogurt, or mashed banana (your choice)
  • 2 tbsp honey or maple syrup
  • 1 tsp vanilla
  • 2 tsp lemon zest
  • ¾ cup flour: ¼ cup almond + ½ cup regular, oat, or gluten-free
  • 2 tbsp protein powder
  • 1 tbsp chia seeds or flax
  • 1 tsp baking powder
  • tsp tapioca starch
  • 1 tsp cinnamon
  • Pinch nutmeg optional
  • ½ tsp salt
  • ¾ cup berries Tossed in a little more flour of choice. This helps with reducing sinking.

Equipment

  • 2 mixing bowls
  • 1 blender or immersion blender
  • 1 Baking pan (8×8, loaf, or muffin tin)
  • 1 oven
  • 1 mixing spoon
  • 1 blender

Method
 

  1. Preheat oven to:
  2. 330°F
  3. Line or grease an 8×8 pan, loaf pan, or muffin tin.
  4. In a bowl, blend wet ingredients until smooth: An Immersion blender works great for this or a regular blender.
  5. cottage cheese
  6. eggs
  7. applesauce/yogurt/banana
  8. sweetener
  9. lemon zest
  10. vanilla
  11. Stir in:
  12. flour
  13. protein powder
  14. chia or flax
  15. baking powder
  16. spices + salt
  17. tapioca starch
  18. Fold in ¾ of the berries. Reserve the rest for topping.
  19. Pour into pan and sprinkle remaining berries on top.
  20. Bake:
  21. 8×8 pan: 35–50 min
  22. Loaf: 45–65 min
  23. Muffins: 20–32 min
  24. Cool 15–20 min before slicing

Notes

Store in an airtight container in the refrigerator for up to 3–4 days, or freeze for up to 2 months.
Optional: For an extra protein boost, top with Greek yogurtand chopped nuts of choice.
Optional: If you want this to be a little sweeter, you can add a small amount of monk fruit extract. For the concentrated version, you would use just one tiny scoop that comes with the container.
