Mix Wet Ingredients
Whisk eggs, maple syrup, coconut sugar, mashed banana, your chosen ingredient (applesauce OR nut butter), and vanilla until smooth.
Whisk in melted coconut oil.
Mix Dry Ingredients
In a separate bowl, combine all dry ingredients.
Combine
Add dry ingredients to wet and mix until just combined.
Fold in chocolate chips.
Chill Dough (important)
Refrigerate for 1–2 hours.
Bake
Preheat oven to 375°F (190°C)
Scoop 2.5-3 tbsp dough onto baking sheet.Tip: For easy uniform cookies use a cookie scoop. Bake:
9–10 minutes
Cool
Let cookies set on the pan for at least 10 minutes before moving.
