For the Salad

  • 2 English cucumbers, thinly sliced

  • ¼–⅓ large red onion, very thinly sliced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • 2 tablespoons chopped fresh dill
  • ¾ cup crumbled feta cheese

For the Marinated Herb Vinaigrette

  • ⅓ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder (or one small grated garlic clove)
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

1. Prepare the vegetables.

Thinly slice the cucumbers, beets, and red onion.

For a milder onion flavor, soak the sliced onion in a bowl of ice water for 10 minutes before draining well.

Place the cucumbers, beets, onion, parsley, mint, and dill into a large serving bowl.

2. Make the vinaigrette.

In a small bowl or jar, whisk together the olive oil, red wine vinegar, apple cider vinegar, Dijon mustard, honey, lemon juice, lemon zest, garlic powder, oregano, salt, and pepper until smooth and well combined.

3. Marinate.

Pour the dressing over the vegetables and gently toss until everything is evenly coated.

Cover and refrigerate for at least 4 hours, but preferably overnight, allowing the vegetables to marinate and the flavors to fully develop.

4. Finish and serve.

Just before serving, gently toss the salad once more and sprinkle the crumbled feta over the top.

Serve chilled.


Preparing the Beets

If you’re starting with fresh beets, here’s an easy way to prepare them for this salad.

Trim the leafy tops, leaving about 1 inch of the stems attached, and leave the root end intact. Rinse the beets well to remove any dirt, but don’t peel them yet.

Place the beets in a saucepan or Dutch oven and cover with water by about an inch. Bring to a boil, then reduce to a gentle simmer and cook for 30–45 minutes, depending on their size, until they’re easily pierced with a fork.

Drain and let the beets cool until they’re comfortable to handle. Using a paper towel or your hands (gloves are helpful if you don’t want stained fingers), gently rub off the skins. Slice into thin wedges and they’re ready to use in the salad.

Time-Saving Tip: You can also use vacuum-packed cooked beets found in the refrigerated produce section. They’re a wonderful shortcut and work beautifully in this recipe. I recommend avoiding canned beets, as they tend to be softer and won’t give the salad the same fresh texture.
