- Preheat oven to:
- 330°F
- Line or grease an 8x8 pan, loaf pan, or muffin tin.
- In a bowl, blend wet ingredients until smooth: An Immersion blender works great for this or a regular blender.
- cottage cheese
- eggs
- applesauce/yogurt/banana
- sweetener
- lemon zest
- vanilla
- Stir in:
- flour
- protein powder
- chia or flax
- baking powder
- spices + salt
- tapioca starch
- Fold in ¾ of the berries. Reserve the rest for topping.
- Pour into pan and sprinkle remaining berries on top.
- Bake:
- 8x8 pan: 35–50 min
- Loaf: 45–65 min
- Muffins: 20–32 min
- Cool 15–20 min before slicing
Notes
Store in an airtight container in the refrigerator for up to 3–4 days, or freeze for up to 2 months.
Optional: For an extra protein boost, top with Greek yogurtand chopped nuts of choice.
Optional: If you want this to be a little sweeter, you can add a small amount of monk fruit extract. For the concentrated version, you would use just one tiny scoop that comes with the container.
