Garden Fresh Gazpacho

This refreshing chilled gazpacho celebrates the best of summer with ripe tomatoes, crisp cucumbers, sweet peppers, fresh basil, and extra virgin olive oil blended into a silky soup with just the right amount of fresh vegetable texture. Perfect for meal prep, light lunches, picnics, and warm summer evenings.

Ingredients
  

  • For the Soup
  • 1 thick slice day-old rustic sourdough or French bread torn into pieces
  • ¼ cup cold water for soaking the bread
  • 3 pounds ripe vine-ripened tomatoes cored and quartered
  • 1 large English cucumber divided (if using another type of cucumber, seed if needed).
  • 1 red bell pepper divided
  • ¼ green bell pepper
  • 1 medium shallot roughly chopped
  • 1 small celery stalk roughly chopped
  • 1 garlic clove halved with the green germ removed
  • 1/4 - 1/2 small jalapeño seeded (optional, for brightness rather than heat).
  • cup extra virgin olive oil
  • tablespoons red wine vinegar or Spanish sherry vinegar if available
  • 1 teaspoon sea salt
  • ½ teaspoon freshly ground black pepper
  • 4 –5 fresh basil leaves
  • Fold In After Blending
  • ½ cup finely diced English cucumber
  • ½ cup finely diced tomato
  • ¼ cup finely diced red bell pepper
  • 1/2 - 1 avocado diced optional
  • 1/4 - 1/2 cup fresh cooked, cold cocktain shrimp optional (Or put on the side as a garnish)
  • Optional Garnishes
  • Fresh basil ribbons
  • Extra diced cucumber
  • Extra diced tomato
  • Finely diced shallot
  • Freshly cracked black pepper
  • Extra virgin olive oil
  • Homemade sourdough croutons

Equipment

  • 1 Large bowl
  • 1 Blender or Food Processor
  • 1 Cutting Board
  • 1 Kitchen Knife for chopping
  • 1 Fine Mesh Strainer optional

Method
 

  1. Soften the Bread
  2. Place the torn bread in a small bowl and drizzle with the cold water. Allow it to soak for about 10 minutes while you prepare the vegetables.
  3. Prepare the Vegetables
  4. Core and quarter the tomatoes.
  5. Reserve about ½ cup each of the cucumber, tomato, avocado, and red bell pepper for finely dicing later. These fresh vegetables will be folded into the finished soup to add texture.
  6. Roughly chop the remaining cucumber, peppers, shallot, celery, and garlic.
  7. Blend Until Silky Smooth (work in batches if needed)
  8. In a high-powered blender or immersion blender combine:
  9. soaked bread
  10. tomatoes
  11. cucumber
  12. red bell pepper
  13. green bell pepper
  14. shallot
  15. celery
  16. garlic
  17. jalapeño
  18. basil
  19. olive oil
  20. vinegar
  21. salt
  22. pepper
  23. Blend for 2–3 minutes until completely smooth and creamy.
  24. Taste and adjust the seasoning if needed.
  25. If you'd like an ultra-silky gazpacho, strain the soup through a fine-mesh sieve. We prefer leaving it unstrained to preserve the fiber and a little rustic texture.
  26. Add Fresh Texture
  27. Fold in the reserved diced cucumber, tomato, avocado, and red bell pepper.
  28. These little bites of fresh vegetables create a beautiful contrast with the smooth soup and make every spoonful a little more interesting.
  29. Chill
  30. Cover and refrigerate for at least 6 hours, but preferably overnight.
  31. This resting time allows the flavors to meld together beautifully.
  32. Serve
  33. Stir well before serving.
  34. Divide into chilled bowls or glasses and garnish with your favorite toppings.
  35. Finish with a drizzle of extra virgin olive oil and freshly cracked black pepper.
  36. Serve with crusty bread or a simple summer salad.

Notes

Tips for the Best Gazpacho

  • Use the ripest tomatoes you can find—they're the heart of the soup.
  • Chilling overnight creates the best flavor.
  • Don't skip the bread. It gives authentic gazpacho its silky texture.
  • Use a good quality extra virgin olive oil. You'll taste the difference.
  • Blend longer than you think you need to. The smoother the soup, the better the texture.
  • Reserve a few finely diced vegetables to stir in after blending for the perfect balance of smooth and fresh.

Variations

Make It Completely Traditional

Use one full green bell pepper instead of the red pepper and omit the basil.
